Here’s a wholesome family recipe that is sure to get your taste buds tingling. Get the family involved and enjoy a delicious meal.
This recipe will serve 2-3 people so adjust accordingly.
2 white onions
2 chicken breasts – diced into 1 cm pieces
3 Garlic cloves
1 tablespoon flour
Slice the onions and add to the pan with the oil to a medium heat pan – soften onions until the are caramelised and jammy – this should be about 15-20mins.
Whilst onions are caramelising, slices potatoes (skin on or off) about half a centimetre thick. Add them to a bowl with oil, paprika and garlic powder and mix together. Place them on a baking tray and cook at 200 degrees for 40 minutes.
Next, chop up 3 cloves of garlic and once onions are caramelised, add to the pan for about 2 minutes until fragrant.
Remove onions and garlic from the pan and add your diced chicken – cook through until browning on each side. Add your mixed herbs and then 300ml of beef stock. Put the onions and garlic back into the pan and then add your tablespoon of flour to thicken the sauce.
Allow sauce to thicken and then add as much cheese as you please! Cover with a lid until it becomes all melty!
Remove potatoes from the oven. Serve and enjoy!
