This week I created one of the nations favourite dishes using some simple ingredients that you can get from every supermarket and even corner shop – Chicken Tikka Masala
Ingredients:
Chicken breasts – 1 per person (you can substitute the chicken for chunky vegetables such as aubergine, courgettes)
2 onions
2 Peppers
Tinned Tomatoes
Coconut milk
Tikka Paste – or any curry paste of your choice
Chop your vegetables and soften with a little olive oil in a pan.
Once softened, add a heaped tablespoon of the curry paste to the vegetables and cook for a few minutes to unleash the spices and flavours.
Add your tinned tomatoes and coconut milk and mix together – put on a low heat to simmer whilst you cook the chicken.
Coat your chicken breast with some of the Tikka paste and to a pan on a high heat (no oil is needed here).
Cook on both sides until you get a ‘char’ on the outside of the chicken breast.
Slice the chicken – if the chicken is under cooked then that is fine! It will carry on cooking in the sauce.
Add to your sauce and cook until the chicken is cooked through
Serve with rice and sides of you choice!
