Welcome back to another cooking recipe for you and your family to try! This is a great recipe that is bursting full of flavour and very healthy too. It is extremely versatile so just swap out the things you don’t like for the things you do!
This is very simple recipe that takes place in only a few stages. Alternatively, chuck all the ingredients in a slow cooker and let it work it’s magic.
Ingredients:
Chicken breasts (or any meat of your choice)
Onions, carrots, peppers, courgettes (swap out these veggies for any that you like)
Tinned tomatoes
100ml Soy sauce
1tsp garlic powder
1tsp chilli powder
1tsp pepper
1tsp salt
1tsp mixed herbs
250ml beef stock
Method:
Chop your veggies and chicken into 1cm pieces.
In a high heated pan, add a little oil and brown the chicken off.
Once chicken has been browned off, add all the other ingredients and stir. Bring to the boil and then reduce to a low simmer. Cook on the simmer for 1 hour.
Serve with a side of your choice – I have chosen sweet potato wedges but alternatively serve with rice, mashed potatoes, roast potatoes.
Once both your side and stew is cooked. Serve and enjoy!
